Bake for the Cure Recipe #4-Banana Crumb Muffins...


To bring more awareness to breast cancer this October, ABCD Diaries is participating in a Bake-Off with 19 other blogs. The Bake for the Cure Bakeoff is sponsored by ACH products.The premise is simple: using ACH ingredients (Argo Corn Starch, Karo Corn Syrup, Fleishmann’s Yeast), prepare two recipes per week (Oct. 4 – 20) and post photos of the finished product.So, each week we will be posting 2 recipes, one from the Bake for the Cure Cookbook and one personal favorite. The blogger with the most comments on their recipe posts wins $500, which would truly be a blessing for our family:)

Today, we are going to share with you our family's favorite muffin recipe...though I do have to give credit to allrecipes.com for this one:)

Banana Crumb Muffins

Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Directions
1.Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
2.In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3.In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4.Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

These muffins are so easy to prepare and the kiddos love to help make them:) We pretty much always have all the ingredients on hand to make these and they freeze well, not that we ever have any left over to freeze:) These muffins are incredibly moist and delicious and if you like nuts they make a tasty addition:)

  6. I wonder if you could replace some of the butter with applesauce? I've heard that using applesauce gives baked goods the moisture without the saturated fat and hormones of dairy products.

  27. Sounds and looks great. I like the idea of muffins instead of bread, easier to divide and freeze. I wonder if it would work to add apple chunks too.

  42. Thanks for the giveaway...looks like a great recipe, the only thing it lacks is a bit more fiber: I would replace some of the flour (1/2 cup) with a "bran buds" type cereal to give it a fiber kick !

  48. Very yummy sounding. I'd probably add a little ginger to the topping mix. (strange, but that's the same thing I said about the Sticky Chicken - so sue me I like ginger)
